Heart Chocolate Date Caramels

Hello again with another yummy recipe that secretly contains dates! We gotta get those dates in towards the end of pregnancy to help us have a quicker labor, but it can be hard to eat them whole (yuck). That’s why I’ve created a series of recipes that hides them into a yummy treat. You could just cut these caramels into squares, but I like how cute the hearts are for Valentine’s Day. Heart Chocolate Date Caramels

Ingredients

  • 15 medjool dates
  • 1/3 cup almond butter
  • 1/2 teaspoon vanilla bean extract or paste
  • 1/4 teaspoon sea salt
  • 2 Tablespoons coconut oil, melted
  • 3 milk chocolate bars

Instructions

  1. Soak dates in boiling water 10 mins
  2. Transfer just dates & all ingredients to food processor until smooth
  3. Add to mold & freeze 3-4 hrs
  4. Melt chocolate over low heat. Dip hearts in and scrape extra chocolate off the bottom on the side of the pan
  5. Sprinkle w/ sea salt & enjoy
